Red fusilier and barramundi - exotic game fish now available
It is necessary to be a fish connoisseur or a well-travelled gourmet in order to know the two exotic fish types "goldband fusilier" (Pacific perch) and "barramundi". Both types are now coming increasingly onto the German market thanks to the activities of DanDo Seafood, Norderstedt. Fusilier and barramundi are particularly suitable for sophisticated set meals, for example those which are customary during the pre-Christmas period and on New Year's Eve. Their fillets are very suitable for crisp frying, gentle steaming or grilling.
The goldband fusilier, in Latin caesio chrysozona, comes from the Asian Pacific region, East India and the Red Sea. It belongs to the perch family and is therefore also called Pacific perch. With its fine, firm, aromatic flesh it can be best compared with the red mullet. (the taste is more aromatic) The other exotic fish, the barramundi, is considered the king of fish in Australia. This also belongs to the perch family and can be found in river mouths and fresh water. Its habitat stretches from the north coast of Australia past Indonesia and on to India and Japan. With its unmistakable aromatic flesh it is one of the most exquisite game fish in the world. The State Association of Chefs in Lower Saxony tests fusilier In its exhibition programme at the Intergastra, the regional team of chefs presented a starter of fillet of goldband fusilier fish. The qualities of the fish proved perfect for modern cuisine. The fillet can be prepared from a terrine just as well as for a light mousse. The team tested the fillet for the first time at the fish trade fair in Bremen, at the stand of trading concern Stöver (import partner of DanDo SeaFood). The team members were quickly convinced that this fillet has very good quality and decided to prove this at the Intergastra in Stuttgart: the presentation of the fusilier in a starter then also met with the complete satisfaction of the judges. DanDo Seafood offers fusilier fillets in two sizes with 20 to 60 grammes per piece. Barramundi is available both as fillet pieces with skin (120-170 g or from 300 g) and as a skewer with three barramundi fillets wrapped in a maki leaf and two pieces of salmon placed on the skewer alternately.
